Weekend Cooking: Chicken Curry, Black Eyed Pees, and Indian Tortillas.


I bought a bunch of Indian food at Mushtafa last week and finally cooked it up today.   Mushtafas must have had 100 different kind of curries and I’m not sure why I choose this one.  I cooked it with Chinese eggplant, Thai eggplant, tomatoe, garlic, ginger, chicken, palm sugar, coconut milk, and a bit of salt.  It came out pretty good, but I think some potatoes would have gone better than the 2 eggplants.   The tortillas were pretty cool and really puff up when you put them in hot oil.  You can see I have two different kinds.
