Jie Hong brought this curry for me from Malaysia last month. Haven’t had curry like this since I left Singapore… oh I miss it.
First things first. Saute up the chicken, curry paste, potatoes, and lastly add the eggplant. This smelled wonderful.
Next, add some water and coconut milk. Normally, you should add the coconut milk lastly (so it doesn’t burn) but i got lazy today. Slow cooked mine for about 20mins and it came out great.
