The Breakfast Of Champions

I firmly believe that breakfast is the most important meal of the day.  My morning meal consists of 4 eggs, some starch (either a potato, rice, or plantain), and one or two green vegetables.  I use to cook all of these things separately in one big pan, but, recently have switched over to frittatas or omelets(if I feel adventurous and flip).  Today’s omelet consisted of 4 eggs, spinach, a small potato, feta cheese, and some salsa.
